Let’s be honest here, Crop Bistro is a tony pub/restaurant with a history — a brief history, yet worthy of its own dramatic television series. The chef left, employee turnover has been high, the food and facilities are terrific, yet the owners seem to be continually looking to reinvent.
Then there’s the beer. Apparently whatever happens in the dining room stays in the dining room, because amidst all the growing pains of opening a top quality restaurant, the brewmaster seems to have quietly invented liquid gold in the same building.
Considering the brewmaster is none less than founding Moat Mountain brewmaster Will Gilson, perhaps we shouldn’t be surprised. Known for some awesome ambers and weizens at Moat, Gilson has taken his art to the next level with Idletyme and Doubletyme IPAs, arguably equal to any in the state.
